use email address instead of name of sendee in "to" field

Whenever I send an email, the name of the person I am emailing is
appearing in the "To" field. I would want the persons's email address
to appear instead. The person is in my address book. How come it
quotes the name and not the email address. I would rather have the email
address to make sure that the email address I am sending to is correct.
