There is a bug with the 'Import Text Wizard' when trying
to import a delimitted file (pipes in this case). When you
get to the step to set the data types - you are unable to
change the data types or field name for anything other
than the first field listed. This worked in the beta
version without issue - in the final product release that
I have (11.5614.5606) this funtion is broken. Thank you
for your prompt attention to fixing this issues.
Also, it would be great to force all fields to be able to
import as a specific type (such as text) without having to
set each one individually.

are you using import-export specifications?

I have the same problem with v. 11.5614.5703. That is, With "Import Text Wizard" despite selecting various fields in the sample below, the "Field Options" remains stuck on "Field1." This feature worked fine in Access 2002.

The "Advanced" button provides a workaround, but that is very cumbersome if you are not familiar with the order of the fields.

I am unable to find anything in the knowledge base on point.

We have this exact same problem, and it is definitely a bug with the software. We are using version 11.5614.5703 Access 2003 and it is very frustrating. I did a search in the "knowledge" base and found nothing pertaining to this problem. At least I am sort of glad to see that it is not just our installations here doing it. If anyone has a fix for this I sure would like to hear it. However, I don't much feel like paying money for M$ technical support only to let them know there is a bug in their new software. How frustrating!

Add me to the list of frustrated users. Glad to see others share my misery.
I did a complete virus scan and reinstall. Should have looked here first.
