xen-3.3.1 para o xenserver-5.0 ??

Olá Luiz.

Sim, você pode. Basta realizar um BACKUP do disco Virtual da maquina,
e alimentar o disco virtual da VM no XenServer com os "bits" do disco
salvo, utilizando o dd por exemplo.
