API documentation is available for xbee-api (Javadoc) and xbee-arduino (Doxygen). Doxygen docs are available as separate download

Read through the project Wikis. Each project has a Developer's Guide

Also review the Code Examples. In xbee-api, there is a examples package under src. In xbee-arduino there is an examples folder, which can be opened from the Arduino IDE
