1. Are these fonts being used from the system running the applet or
are they received from your server?

From the server.
 
2. If they're received from your server, is it possible for you to
provide complete fonts including Chinese character glyphs as well?

Sadly, not at this time. Such a font is too large for my bandwidth quota.

I understand. Seeing as the applet does the layout locally, is there
any way I can have/make the applet use fonts from my own computer?

In that case, would you be willing to open the source of the applet?
I'm sure using local fonts would be quite a brilliant feature, and I
don't foresee any difficulty in implementing it.
