I have the wikipedia files and was able to SSH into my iPod touch ver.
1.1.5, which I jailbroke with ziphone 3.0, but I noticed I only have
the folder "Library" with subfolders "Installer", "Lockdown", and
"Preferences". What is the quickest way to get the "Applications"
folder?

The command
cd /Applications
should sort you out.
