Hi guys,

Dave and I talked yesterday and I think we started about a good plan.  Some of the thing we all want to consider:
  • Not too many different grapes, but consider blending options
  • Dave and Stephanie want to do some wine on their own, but also want to have the option on common wine
  • D and S want to do Syrah, Malbec and Viognier
  • I think doing our classics and something new sounds good
  • I'm now thinking some Zin, Bordeaux, Italian, rose and white, but simplified and working with Dave's ideas
  • For simplicity, we may say good-bye to Petite Sirah this year and try Malbec as our blender for tannins
  • Rose can be from Syrah or Sangiovese
  • White should be Viognier
  • Let's blend Zin with Malbec and see what happens
  • Sangiovese will make Chianti (less aging) and Brunello (more aging).  Could add Malbec if needed for structure, especially for the less aged Chianti
  • Bordeaux could be made with Cab and Malbec and be very true to style and delicious 
  • This thinking keeps our grape order to either 5 or six grapes, but still allows lots or variety.
I'll stop here and see what people think about all this.

This all sounds fine to me.  I'm all for keeping it simple (and the band together).  Will be good to experiment with some different blending options as well.

    when do we want to bottle the grenache, rose and zin? i spoke with greg and we thought april. can we nail down a weekend?
    we will need a few bottles for svb. clear bordeaux, right?

    Sorry I missed this in my inbox. I am going to be in Hawaii April 10-20. Any other weekend than those should be fine for me. Do we still have any of that early bottled SVB?  I guess I never picked any up.

    Hey guys, I opened a bottle of the cab a couple hours ago and just tried it it's actually quite good! Surprisingly so!
