Try the zin in the barrel and the zin in the keg to compare. The wine in the barrel is so much farther along and rounded and nice. The wine in the keg tastes much younger and not nearly as good. Barrel aging is the way to go!

i was thinking that we should bottle just before this year's crush to give the barrels some time to do their work. on the other hand, if it is aging so nicely, we could bottle some from the barrel and then move the kegs to the barrel.
of course the white and rose's will be ready much sooner. i am drinking a sample of the SvB right now and find it quite excellent. there are 3 six packs here if will, alexis and greg want to pick them up.


here are some thoughts about the grenache:

blend 10 gal grenache rose with 6 gal grenache (almost rose) = nice color
12 gallons of grenache (almost rose) straight
15 gallons  of grenache (almost rose) mixed with 5-6 gallons ps 25-28% ps or even more ps. have to experiment with some blends
that leaves 6 gal or less of grenache for topping up ps. not ideal but neither is too much head space.

Very interesting thoughts on bottling and moving kegs and glass to barrel.  We should really think about how to do this.  We may empty the PS barrel in the process.

btw. I've got a line on 2 free glass carboys. Are we interested or are we moving away from glass at this point?

Also, got a line on 4 large oak barrels, apparently in good shape...though had been used to catch downspout rainwater for a year. Does that ruin them? If so, I'll still get 'em but make planters out of them.

i personally don't want any more glass. too heavy.
yes, i think you could say that using them to catch rain water would ruin them.

We could do this bottling and blending in April.

Bottle the Grenache, rose, sav blanc, some zin and petite.  Later in the year we'll do cote du Rhone and the balance over the zin, which would still be over 100 gallons!

What's the word on the sauv blanc Dave?
