Three ways to boot the OS X 10.6 64-bit kernel:

[1]
Hold down the 6 and 4 keys when booting. The effect is
temporary. I'm not sure exactly when you have to hold the
two keys down, so I keep them held down until the login
screen shows.

Add a key/value pair to this file:
/Library/Preferences/SystemConfiguration/com.apple.Boot.plist
Here's what needs adding:
<key>arch</key>
<string>x86_64</string>
You'll need root privileges to edit the file.

Run this command from the terminal:
sudo nvram boot-args="arch=x86_64"
To reverse:
sudo nvram boot-args="arch=i386"
