Yup, did that but it wants to keep defaulting to the American Dictionary
every time I open a new document.

I saved a blank template with the settings in it. You can also do this
in the Inspector/Text/More tab.

System Preferences > International > put British English at top of list?

They did a Windows port, which is unforgivable.

Done that. I think the only way is to save templates whenever possible
and check the settings on start up if you have quit the program.

True. But, as I /never/ use Windoze in any form it's not a problem.

You can also untick all the ones you don't need too.

I just checked with my copy; it opens new docs in UK English. That is,
it rejects 'color' and accepts 'colour' which seems conclusive enough
for me...
I have 'British English' at the top of the list in Sys
Prefs:International. And that's what appears under 'Language' in
Inspector:More:Text. From what I can remember, I never had to set this
up in Pages; it picked it up from the system prefs.
This is in 10.4.11 on my iG5. I just checked on Anne's MBP, with 10.5.7,
and it behaved the way you described, including not sticking to British
English if I select it via the Inspector. I then went into Sys
Prefs:International and selected British English to the top of the list
[1], and now Pages behaves properly on there too.
[1] It was our first new Mac for years, and we hardly ever use spell
checkers, so she's never noticed. But it makes me realise that when I
set up two iMacs for friends, I didn't change the language setting there
either. However, neither of those ladies need the spell checker, so they
haven't noticed. Next time I'm across that side of London, I shall have
to call in and fix that.

The only way I've found that sticks is document by document in the
Inspector...

Correction, same issue with British English not being checked by default
in 'International'. One more little thing that Migration Assistant
doesn't seem to move across (or didn't, in this case, at any rate).
