This wasn't available via my cable operator when the Olympics started, but there are now many Video On Demand Olympics offerings.  I'll catch up on the part of the Opening Ceremonies I missed sometime this weekend.  As my TV has better resolution than my computer, I am a bit pleased at this.  I have FIOS, and it seemed that I would have been prevented from seeing the extra content because I don't get internet coverage from the same provider.

Some of the segments offered are analysis, some are highlights only, some are just individual events.

Given the discussion we had about commentary, it seems relevant to note that at least some of these are commentary free.  Others have what would appear to be local commentators (English accents) that are sometimes hard to hear above the background noise. While it's nice not to hear so much talking, if you don't know the event, you won't get some needed context.

Many of the non-highlight segments aren't actually full matches or heats, cutting forward in the action (such as showing only 4 of the final shots).

Of course, your provider may have different offerings, etc.

Having reviewed more events, it seems that the events without commentary or with local commentary simply weren't broadcast on an NBC/Universal channel.  For events like basketball and swimming, an NBC logo and American commenter are used.

I've been amazed at the quality of the picture and sound on the iPad
Olympics
live coverage app. You can watch any live event (none are ever taking
place
during East coast prime time) or watch some video highlights of events that
are completed. Many of the events have no announcers but do have graphics
that help explain what's going on. I've gathered that NBC isn't covering
any sailing - there doesn't seem to be much if any live coverage on the
iPad
app and even the highlight videos have no announcers or even graphics.
