video link for proper way of slaughtering a chicken, cutting the 4
veins for a chicken is more difficult when compared with a goat or a cow, you
have to be precise enough so that you may not cut the soft bone at the
neck, which results in disconnection of brain with heart & with a cardiac
arrest, full blood will never come out properly.
Many of our friends consider that
fresh chicken supplied at the houses or sold at some shops is fair enough &
better than the frozen, BUT NO, if you need to be 100 % sure, get your chicken
slaughtered in front of your eyes & with the proper way as recommended by
our Ulama.

Look what شيخ ابن عثيمين wrote in his
Fatwa.
Cutting windpipe + esophagus + the
2 jugulars حلقوم والمري
والوجدين will never be possible by a mechanical TO &
FRO knife, OR by a mechanical knife that moves like a swinging PENDULUM, even
with a ROTARY knife, it is totally impossible, you have to slaughter the animal
/ poultry by your hands.
For slaughtering chickens, be
careful for not taking the knife deep to the neck bone, if you
will cut the neck vertebrae, circuit between the heart & brain will be
switched off that will result in CARDIAC ARREST, hence the blood will not
come out properly.

الجواب
الشيخ: طريقة الذبح الإسلامية أن تأتي
بسكين حادة قوية وأن تمرها على رقبة المذبوح بقوة وأن تسمي الله عز وجل عند
تحريك السكين وأن يبرز الدم وذلك بقطع الودجين والودجان هما عرقان محيطان
بالحلقوم وهما الوردان عند كثير من الناس هذان العرقان عرقان غليظان يوزعان
الدم على البدن من القلب فإذا قطعا ماتت الذبيحة فلا بد من قطعهما واشترط بعض
العلماء قطع الحلقوم والمري وقالوا أن الواجب قطع الحلقوم والمري وأما قطع
الودجين فسنة والصواب العكس إن قطع الودجين هو الواجب لأنه هو الذي به ينهر
الدم وأما قطع الحلقوم والمرئ فهو سنة فإذا قطع الأربعة فإن الذبيحة تحل
بالإجماع وإن قطع ثلاثة منها أو اثنين منها على التعيين دون البقية فهذا موضع
نزاع بين العلماء والذي يظهر من الأدلة أنه إذا قطع الودجين حلت الذبحة ولكن
الأكمل والأفضل قطع الودجين والحلقوم والمري.
