Gourd Pulp's Halwah

After juicing, Gourd's pulp can also be consumed as Halwah. Fry the pulp in Ghee for 20 minutes, then add brown sugar & nuts of your choice, I added Lotus seeds & Chahar Maghaz (seeds of Honeydew, watermelon, cucumber & Kaddu). Fry again for 20 minutes, that is all. Brown sugar will impart its own color on Halwah.
 
In this recipe, I used Coconut sugar, it is a miracle of my Allah's creations for Diabetic patients, when coconut flowers bloom, incisions are applied on flower buds & coconut sap is collected, it is heated to evaporate water & a Jaggery type sugar is obtained. The Glycemic Index of coconut sugar is 35 and is classified as a low glycemic index food.[4] It is considered to be a healthier than traditional white sugar and brown sugar. It can be used as a 1:1 sugar substitute for coffee, tea, baking and cooking. Coconut sugar has high mineral content, a rich source of potassium, magnesium, zinc and iron. In addition to this it contains Vitamin B1, B2, B3and B6. When compared to brown sugar, Coconut Sugar has twice the iron, four times the magnesium and over 10 times the amount of zinc.[5]
