Don't know anything about iphone screencasting so I can't help you
there... is it dramatically different than other systems?

I feel confident that I can muddle through whatever software is available
to me, my main concern is the planning, preparation and editing phases. 
I'd like to hear what common pitfalls and mistakes are so I can avoid them
and create useful, clear and relevant work.

I'm a teacher so my needs are more in training and tutorial materials
rather than product support, tours or meetings. You know what would also
be cool?  A screencast about screencasting.  and/or   A handout tutorial
that can be given to students to show them how they can use screencasting
to display and highlight their work.  A bare bones overview would help me
as a teacher, help my students.  I am trying to encourage other teachers
to use this technology as well.

On an organizational note... it seems to me that embedding one type of
distribution so you may want to put those together.  Also... common
workflows might fit as illustrations of your "deeper look" chapter.  Do
you want history of screencasting at the beginning?  (I doubt I read it at
the end.)  You might want to put the 30 min. and 1 day pieces together
under "When time is short" and after the techniques chapter so I can
better appreciate which pieces are being pulled out for the shortened
schedule.
