For me in person organizing a biketour is a new experience and I am not
of this area - so personally I am not much of help. I would just scroll
the web. But I've send your request over our email list so perhaps
someone with cyling experience in Hungary, Serbia, Bulgaria and Turkey
(BT 2008 went through this last 2 countries) replies you with a better
advice.
About troubles on the way: if someone really isn't able to continue
because of injury or sickness the person can either catch up later on
the route (and get their by bus/train) or give up and go home.
For sleeping places you can either ask around when you are on the way..
look for campsites on the web or ask tourist office/ngo's/civil groups
in advance by mail for tips.
