Give me a couple of weeks and I’ll be running Win2k3 server on my new Mac.. it’s just not here yet.

Yep, we've talked about it several times, even more so on the SFX list.
:-)
It works really well. We have several folks running SFX this way. And
I've put together multiple Mac Minis with a Presonus Firebox for
companies that need a small, easy to move around system. The whole
thing fits in a rolling laptop bag.
My test system at home is a Mac Mini.
Drew did report some issues as of late. However I don't think they are
exclusive to running SFX on a iMac (systems he was using) because the
problem was not happening on all of his iMacs.

Right. I would not recommend trying to run SFX with a virtual OS on top
of OS X. Too many extra layers between SFX and the hardware that way.
Even if you do make it work, I suspect performance would be
significantly reduced which obviously is not what you want from
something that is running your production.
So yes, please use Bootcamp.
True OS X has nothing to do with it when using Bootcamp. But the Mac
hardware still will. Luckily I have not seen any issues from my end.
