Smoked Salmon Crostini

>From Cooking Light's Annual Recipes of 2005. The hardest part of the
recipe was a) toasting the baguette slices and b) waiting patiently
for the chill time. Trader Joe's has the least expensive selection of
smoked salmon.

Combine in a bowl:
1/2 cup chopped fennel bulb
1/4 cup chopped green onions
1 T EVOO
2 t chopped fresh dill
1 t lemon rind or zest
1 1/2 T lemon juice
1 t fresh ground pepper
8 oz. smoked salmon, cut into thin strips.
Cover and chill the above ingredients for one hour. In the meantime,
toast 1/2" thick slides of baguette or whatever suits your fancy.
When you're ready, spread each toast with garlic & herbs spreadable
cheese (like Alouette or Whole Foods version, or make your own!), top
with the salmon mix and a dill sprig.

The salmon crostini was wonderful! I overheard many guests saying that
they felt they could it this everyday! =)
