What I do is saute some thick slices of bacon cut into 1/2 inch pieces till
they render out. Remove bacon to the side. Now add chopped onion, garlic
and green pepper and a bit of celery to the pan and cook them till tender.
Season with salt, black pepper and a bit of hot paprika. Add back the
bacon bits and a can of blackeyed peas, rinsed well of the liquid. Toss
together well, and dump it all over cooked brown or white rice, whichever
suits you best, mix till all is blended and cover till the flavors meld
nicely for a few minutes before you serve it.
