In my research, I have come across a the name of "Bixe" in early
English records. I also found that if the "x" comes before and after a
vowel, the sound is an "sh".
But is this suggestive of the Saxon pronunciation?
Any help appreciated.

No. Catalan, Galician, Basque, maybe, but definitely not Saxon.

What do you mean by Saxon anyway?

Since there is some indication this was a name in England prior to the
Conqueror, I perhaps should have said Anglo-Saxon or Old English
phonetic.
