A good place to start is

the German war graves institution. Sorry the name BOBIEK isn't in their
database at all. But as they state on their site, still 1.5 million persons
have to be entered into their database.
Maybe they have some other search suggestions for you.
Please do not forget that not only a very large number of Germans were
killed in action in or around Stalingrad, but many too died of exposure etc.
in the POW camps after the surrender of the town. So although it may seem
that the person you are looking for was actually killed during the battle it
can very well be that he either went missing in action or died in one of the
POW camps.
Another possibility might be the German Red Cross. I'm not sure but it may
very well be that they have lists of POWs that came back from Russia.
