Just had some bad BBQ

I'm no expert, but I think I just had some real bad BBQ yesterday.  Spares were "lights", with a leather bark and little meat.  Brisket was lean but dry and tasteless.  fatty wasn't offered.  Both were served almost cold, room temp at best.  Beef rib was very good, though.  I had high hopes cuz this guy was a real Texan and I was looking for a taste of the real thing.

Can't wait to get to the Carolinas.

I used to live in Greenville NC. If you get that way, yell. There are two places I'd recommend (one is a must, the other is good). If you hit the Memphis area also let me know. I've not spent as much time exploring there as I have Nashville but I know one place to go and one to avoid at all costs in Memphis. Nashville has a few joints that sound fun but I'm generally there with my wife or family and we normally hit things we cannot get locally.

You occasionally hit a bad one.  It is amazing how some of these places stay in business, but they do.  While on a recent interstate road trip, I stopped at a Dickey's BBQ.  They are apparently all over the country, just not so much in my area.  The worst food I have had in a very long time.

Dickey's just opened a store here.  I haven't been tempted.   Sounds like I shouldn't be.

when I visited relatives in Minneapolis last summer they had a picnic catered by Dickey's and the food wasn't bad I've had a lot worse!

Chains always have variances from one location to the next, so who
knows. Oklahoma Joe's in Kansas City has only three locations because
they found that quality would suffer with more locations. When you have
a couple hundred...? The smoked ham was OK, but I think it was just
heated at the store. My brisket was chewy like a steak cooked well
done. It had no smoke taste and no underlying flavor from any
spices...just plain chewy beef. The BBQ Beans were absolutely nasty!
They had no sweat or spicy, just a rancid smoke taste like they scooped
ashed from the pit and stirred them in. Two bites were all I could
manage. I'm going home to KC in a few weeks and looking forward to some
real food!

A year or so back Dickey's opened a place out on da loop in Lufkin.  They have another in Nacogdoches, Tx, 20 miles to our north that most folks literly sing praises about.  I was lookin forward to the opening.  I have tried the one in da north and its is quite good but the local joint wasn't hardly fit to eat.  They closed their doors after 'bout 4 months, stayed closed for a while and re-opened with a new owner.  Haven't tried the ''New" Dickey's out yet.  Maybe next week.
 
There is a place out on another hwy that serves inside a convience store.  When I get the urge to ''buy'' some Q I usually go there.  An old Mexican dude runs da place and usually has pretty damn good beef and ribs for around 10.00/11.00 $ per pound.  I said beef [and not brisket] cause I suspect he uses a sholder clod.  Still pretty good stuff.  The ribs are just good and not great.  Not real sure x-zactly how he cooks um but their may be a pressure cooker somewhere in the process.  Just a little too tender to be great ribs.  The ole Mex always gives me a very generous serving of sides and at least half a load of light bread.  He USUALLY throws in a special lil sumptin X-tra as well.  The world needs more places like his...................
