OT-Breadmaking question

My wife gave me a HD Kitchen Aid mixer for Christmas.  I have lots of bread machine yeast, but no regular yeast.  Can I use the rapid rise yeast in place of regular yeast, packet for packet?  TIA

Good timing.  I've a loaf of bread in the oven even as we speak.  Rapid yeast is fine packet for packet.  You just don't need to proof it.

Be careful making bread with that thing. Even the HD model has problems with dough. I’ve burnt two of them up in as many years. They don’t make ‘em like they used to.

Our KA is about 25 years old and does bread like a champ.  I generally do two loaves at a time.  If the newer ones don't do as well then I won't be looking to upgrade soon.

Thanks guys.  Getting ready for the maiden run.  Hope I don't have problems.  Mine is the one Costco sells with the metal gears.

Gonna go make some french bread now.

If yours is working well, stick with it.  Someone else probably knows the KA story, as to who bought out who, etc. Anyway, the gears are now made of nylon, instead of brass. Need I say more?

Yes, Just mix the rapid rise yeast with the dry ingredients and proceed as it does not need to be proofed like regular yeast.

The 25 year old one was made by Hobart, the company that makes most of the mixers used in professional kitchens and was built with the same quality.  Somewhere around 20 years ago, they sold the KA brand to Whirlpool and they do not make them the same.  I burned out a new KA 625 watt "heavy duty" machine trying to make a dough I had made hundreds of times in my 30 year old 275 watt Hobart built KA.  I have a Bosch Universal that I have now had for 7-8 years and it does doughs great.  I highly recommend them.  I also hear that the new Viking mixer is pretty good, though I have not tried one.  Its design is more like the KA.

I have the Viking.

 

I have had it for about 3 to 4 years. I had a shut down about 1 year after I had it but the service was excellent.

 

It is really a workhorse and I am happy with it. Makes 3 large loaves of bread easily

 

For more on/off list topics (that is low and slow) my xmas present was delivered in the middle of November, the Sous Vide Supreme.  My information came from this list.

 

While I knew of the technique for a few years, It was impractical for the home cook. I will not bear the wrath of being too much off subject unless you are interested. The theory is akin to bbq except there is no smoke. I realize this is heresy but the results are awesome.
