Peach cobbler! You just gave me my desert for tonight's rib dinner. I
think I still have Bruce C's cookie dough cobbler in my files. I was
planning a peanut butter pie for the third time this month, so the
family might appreciate the change up.

Has anyone made or know the recipe for peach cobbler where the dough is placed on the bottom of the pan, and the fruit on top, and while it cooks, the dough rises to the surface? We've been buying packaged mix and making those, and they're quite good, but I'd rather be in control of the additives.

Look on a Bisquick box. They use to be one on there.

these recipes are from Ray Lampe's 1st book--Dr BBQ's Big-time barbecue cookbook

Bonesmokers cornbread casserole

1 1/4 C cornmeal
1/2t baking soda
1t baking powder
1t salt(adjust if using unsalted butter)
1 stick butter--melted
1C milk
4 eggs lightly beaten
2 cans creamed corn
mix the dry ingredients then add butter, milk and eggs-mix well then add corn--mix it up and pour into a greased pan and bake for about 1hr--I usually add chopped green chiles, sauteed onion and shredded cheddar----usually use a 9x9 glass baking dish

peach cobbler--from Barb Milroy(texas rib rangers) via Ray Lampe

1C flour
1 1/3C sugar
1 1/2t baking powder
1/4T salt(more if using unsalted butter)
1/2C milk
1 stick butter
1 15oz can sliced peaches--drained
I add some spices too--right now usually 5 spice

Mix flour, 1C of sugar, baking powder, salt and milk until blended.  melt butter in pan( I use 8x11 glass), pour batter into pan spreading evenly. warm peaches in small pan with reamaining sugar until sugar is melted then pour over the batter--bake for about 45min or so--cool slightly and serve

Quick Cobbler Pie

Recipe By :Mrs. Schoonover
Serving Size : 1 Preparation Time :0:00
Categories : Desserts

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 cup flour
1 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup milk
1 stick butter


Preheat oven to 375
Mix above ingredients, except butter.
Put butter in 8 x 12 baking dish and melt. Pour above mixture into
butter in baking dish. Add 1 medium sized can of sweetened fruit or 3 to
4 cups of fresh fruit. If fruit is not sweetened, add 1/2 cup sugar on
top before baking. Bake about 45 min.
