Looks good to me, I have some chicken ready to go on the smoker and some rice working.

I got a pork butt percolating on the WSM for dinner. Got some nice kaiser rolls on clearance at the market and I've been enjoying the warm day with a couple gin and tonics!

Maybe too many GT's but there was a humming bird on the wires above my backyard and I had to break out the telescope to check it out. Kids loved it. Can't complain about a nice day!

Nice days are relative. We got up into the 40's and in honor of the warmth we put some ribs on the WSM over a pot of beans.  Potatoes going into the oven now.  Rhubarb pie is cooling.  Maybe we'll see some hummingbirds in 3 or 4 months.

Got this chili recipe off the cookstr.com web site (nice site for
recipes). It's from Robb Walsh's Tex-Mex Cookbook, which I don't have
but may have to buy. Got it in the pot for tomorrow's game. Smells
pretty good. I used some Edwards bacon and brisket I got from Sam's.
Looks like the only way I can cook brisket is in chili. I sure turned
out some bad brisket last week in my WSM. Think I need to re-enroll in
Gary's course.

Truck Stop Chili

¼ pound bacon
3 pounds trimmed beef brisket, cut into ¼-inch cubes
1 pound onions, chopped
1½ tablespoons ground cumin
3½ tablespoons chili powder
2 teaspoons paprika
1 teaspoon dried Mexican oregano
1 teaspoon ground black pepper
½ teaspoon dried thyme
½ teaspoon salt
4 large garlic cloves, minced
One 13.75-ounce can beef broth
One 28-ounce can plum tomatoes in puree
2 dried chipotle chiles

Here’s a more elaborate diner-style chili made with bacon and
chipotles. It tastes great all by itself, over tamales, with a side
order of beans, or as an enchilada sauce.

Cook the bacon in a large skillet until crisp. Remove the bacon and
reserve. Over high heat, brown the beef in the bacon drippings left in
the skillet and set the meat aside. Over medium heat, sauté the onions
in the remaining drippings for 8 to 10 minutes, until lightly browned.

Toast the cumin in a small skillet over medium heat, stirring
constantly for 1 minute or until fragrant.

Add the toasted cumin, chili powder, paprika, oregano, black pepper,
thyme, salt, and garlic to the cooked onions and sauté for 1 minute.
Crumble in the bacon, add the beef broth, 1 cup water, tomatoes,
chiles, and the beef. Bring to a boil, reduce the heat, cover
partially, and simmer for 3 hours or until the meat is very tender,
adding water as needed to maintain the desired consistency.

Servings - 10 cups
Cooking Time - 4 hrs
Total Time - 4 hrs

That Opa's Jalapeño sausage is awfully good!  It flavored the beans and the rice all the way through.  Good grub!

Made about 4-5 blocks from here, but HEB carries them all over the State
