Trust me when I say, comps are not a good gauge on how well you stand up to others.  I couldn’t serve my comp food to the public for profit.  They couldn’t afford it.

Yep two different things IMO.

Comps your looking for that one bite of excellence and to cater or have a joint your looking for a quality complete meal of satisfaction. Oh yeah and not go broke in the mean time. <G>

Food service is a calling.  If you’re not called to it, best advice is to stay out of it.  Heeding that advice will save your marriage, your family, your home and any sort of dignity you can muster. <BFG>

I spent 35 yrs in the foodservice field, and the last job I had I got fired by a dist mgr that was in high school at the same time as my oldest daughter. I am thinking of going back in on the catering end, but most importantly whatever you do, you should do it on your own terms.

I still think about it myself and I agree you have to have a calling AND do it on your terms.

It's kind of like getting a cavity search. It's fun at first but after a while it starts to hurt...

I am with you on that.  Since Robert is such a good guy, I am going to assume that the experience which led him to that analogy is based on his visits to his proctologist, and not based on his recreational activities.Smile  Just for a laugh Robert!!!
