Just came across this from a customer out of Louisiana.  Any of you familiar with this and do you like it?  Pros and cons?  Compared to?  Make it often?  Serve it with?  It sounds intriguing to me.....

I make Hot Water Cornbread aout twice a week. I love the stuff. Sort of a first cousin t a hush-puppy. Serve it with anything.........includeing ice cream.

The recipes I've found do state you should make it into a patty, so I'm guessing yes.  Looks like it's another way to do cornbread, only fried and covered in butter (which makes it sound awesome).

Here's the way I think it's done traditionally, no baking powder or anything.....

People swear by it and seems it goes well with peas and tomatoes.

Self-rising cornmeal
Boiling water
Oil for frying (butter- flavored Crisco is good)
Nothing in this recipe is measured. Depending on the amount of cornbread you want to make, pour cornmeal in a large bowl. Pour boiling water over cornmeal and stir quickly. Batter should be very thick. Drop by rounded spoonfuls into hot cooking grease. Fry until golden brown. Drain on paper towels and serve hot. Similar to Hush Puppies, only better.

Some make a patty and some make by dropping rounded spoonfuls in the grease.

This sounds like hoe cakes.  My granddad made these with white corn meal and pan fried in bacon grease.  So very good.  At least I remember them being good.  I haven't had any in 50 years or so.

self-rising cornmeal is already got, baking powder, baking soda and salt in it.
  Go to Pete Jones Skylight Inn in Aden, NC and get the cornbread there.
  One version I make is plain stone ground cornmeal, lard, salt and hot water. I bake in a cast iron skillet.
  I put about ¼ cup lard, bacon grease, oil in the skillet and pour the mixture on top of the oil.
Take about 2 cups of meal, ½ teaspoon of salt and enough hot water to make a fairly stiff batter.
  Bake at 425° until good and browned.
  This will not rise and makes a flattish pone.
  I like it, BUTT most people will find it bland, specially Yankees, they like sweet cornbread, made with self-rising meal or batter made with plain meal with baking powder and sugar in it.
  Hushpuppies got a egg in it, BUTT no oil. They made with self-rising or plain meal. Add baking powder to the plain.
  Skylight used to make their cornbread with drippings from they hogs they cooked, BUTT since hogs come without fat these days they buying lard in 5 gallon buckets.

While the pork at the Skylight was amazing --the cornbread sucked-imo anyway---adding sugar WOULDN'T help it at all

Sounds like what I recall as Johnny Cakes.

Never tried them, but they do sound good.  Kevin's wife made a mess of killer popovers last night...cow butter for dinner, peanut butter for dessert.

Ok Sunday will give the hot water cornbread a try--think its time to do a butt hot and fast and cornbread does go well with pork---but will not make the over processed slaw

First time I was there was with Bob in Ga, Ginger, Jack Waiboer and Blue Eyes. I ordered a pork sandwich, I also ordered a side of pork and a side of slaw, it came with cornbread. The sandwich was good, BUTT I preferred the pork and slaw separate. I went back and got another piece of cornbread, $0.50, they would not let me pay for it.
  I made cornbread here when there were more than just me and they didn't like it either.
  One time I made a pan of cornbread with Jiffy Mix and added more sugar. She liked that. It is the way her Mother made it.
  The slaw was pretty good. Very simple.
  You city boys is spoilt.<g> Watched to much Julia Ya did. ( I liked Julia BTW)

my cornbread doesn't have sugar but it is leavened--great for sopping up juices or spteading with Steens!!!

Looks like Kevin's recollection is pretty accurate. From what I found out from Cooks.com Johnny Cakes are "Plain Old Hot water Cornbread." Which depending on who you believe were from the caribbean or the mayans. And also Journey Cakes and Hoe cakes which have been discussed here. And who hasn't read Journey Cake Ho? All the recipes for Johnny cakes  seem pretty close. Far as Yankees go Big Jim they must have been found of them round here at some point  since  I live on Johnny Cake Lane in Albion, NY. Going to have to find out bout when/why that name came into being here.

My dad would cook cornmeal in a saucepan and then put it in a loaf pan to cool--next morning it would be sliced fried and served with Karo syrup

Yeah I think that is the normal mush but we had fried mush. Like I said that is what it was called. So really it was more like the hot water corn bread. Maybe it was too many words and syllables for my family <g>

I never liked liquid mush either but love grits.
