In a ring of switches, should i also enable sflow on uplink ports? I
wonder if receiving samples of both client port and all uplink ports
that some specific flow use on its path from client to server, could i
receive double samples from a flow and get a wrong calculation of the
traffic?

It is best to enable sFlow on all ports on each switch. sFlowTrend
should be able to deduplicate the traffic, and give an accurate
representation of everything. Let us know if you see any problems.
