I was just wondering why children tend to like cartoons while adults
tend not to.

Maybe because cartoons (unless they are intended specifically for
adults) tend to have simpler plots and characterizations that are easier
for children to understand but are boring to adults because they are too
easy. Cartoons also tend to be more action oriented and this attracts
children as well. Any mother can tell you kids like action, they wiggle
a lot, they find it hard to sit still for a long time.
