Does anyone know some detailed source of information (books, scientific
papers, etc.) on mathematical modelling of migration of monomers or other
substances from polymers to food (particularly from PET to water)? I am
involved in the study of the release of aldehydes from PET to mineral water.

I imagine that Eastman and Shell may both have done work in this area since
they both have polymers used in the bottled water markets. Eastman sells
their 9921W for bottled water and Shell is introducing a material called
"Aqua" for bottled water. Both have WEB sites that should provide you with
contact.

Slightly more complicated than this. Manufacturer of food container is
responsible for passing FDA specified extraction tests. Probably no spec for
acetaldehyde as FDA specs are normally in mg/sq inch. Acetaldehyde content of
PET article depends on heating history of resin. Also, don't forget
acetaldehyde is component of food such as grapes an apples. Far more than you
would get from a PET bottle.
