Some lady has come up with a theory that as you look closer at space
and objects within it, dimensionality is lost and eventually all things
collapse to 1 dimensions.

The closest analogy I can think of is a tree like structure.
As you peer closer inside the tree, it looses its 3D and turns into 2D
branches. As you peer closer, there are fewer and fewer branches
until you get to the one and only 1D trunk.

There are only three dimensions.

Time is not a dimension.

   No, flat in 4-dimensions such that parallel lines don't intersect.
   Flat as in Euclidean geometry.
