Basic Watkins Chili

Ingredients

1 pound/454 g lean ground beef

1/2 cup/125 mL chopped green pepper

1/2 cup/125 mL chopped onion

1 can (15 oz/425 ml) kidney beans, drained

1 can (16 oz/454 g) diced tomatoes or stewed tomatoes

1 can (8 oz/227 g) tomato sauce

2 tbsp/30 mL (more if desired) Chili Seasoning

Cooking Directions

Brown ground beef along with green pepper and onions in large kettle; drain grease if necessary. Add remaining ingredients and bring mixture to a boil. Reduce heat and simmer at least 30 minutes. Garnish as desired with chopped onions, shredded cheese, or sour cream.

Makes 6 servings.

Helianthus, the botanical name for sunflower is actually an herb native of the western hemisphere blooming in late summer, early autumn.  Although now, many varieties are ready in late spring, early summer.  No special care is needed for the sunflower, any ground or exposure suits them.

The common sun flower grown in gardens is the hellianthus annuus, growing to 12 ft with heads one foot or more across.

About 3 million acres of sunflowers that are grown each year in the U.S., up to 90% are the oilseed type.  A significant fraction of the oilseed harvest goes for birdseed production, but most of the seeds are processed into vegetable oil.  Of the seeds processed for oil, about equal thirds are dehulled, partially dehulled, or left with hulls on for processing.  When hulls are removed, they become a very low value byproduct, most often burned for fuel.

There are 67 species of sunflowers, growing in the USA, Europe, Japan, and Russia.  The Guinness World Record for the tallest sunflower is 25' 5 1/2" (7.76 m), grown in the Netherlands. The largest diameter head was grown in Maple Ridge, British Columbia and was 32 1/4" (82 cm) across.

Most Americans take vitamins!

The American public is health-conscious and mindful of proper nutrition.

According to a new poll commissioned by the national publication

USA TODAY,two-thirds of American women take vitamin supplements regularly, and 70 percent of respondents recognize that vitamins provide important health benefits. Other recent nationwide surveys have shown that the number of Americans who regularly take some form of nutritional supplements is approaching 180 million, an overwhelming majority of the population. Public health officials expressed hope that the poll results would encourage even those Americans in the minority to begin looking into vitamin supplementation as a key part of a healthy lifestyle.

A recent study of 43 garden crops suggests that the amount of vitamins and minerals has declined over the past 50 years, while farmers have been planting crops designed to improve other traits, such as resistance to pests and disease. Significant declines were seen in amounts of protein, calcium, phosphorus, iron, riboflavin and vitamin C. Scientists speculate many more are on the decline. In addition, more vitamins are lost during transport and storage, and since fresh produce is now transported from thousands of miles away, additional vitamins are lost. These findings suggest that our food supply may not be providing the amounts of vitamins and minerals they once did, and we may not be able to depend on food, alone, to meet all of our nutrition needs.  So please take your vitamins.

Best Ever Barbecued Ribs

Ingredients

5 lbs/2.27 kg pork loin back ribs

2 cups/500 mL water

1/2 cup/125 mL apple cider vinegar

1-1/2 tsp/7.5 mL Garlic Granules

1-1/2 tsp/7.5 mL Seasoning Salt

2/3 cup/160 mL ketchup

1/3 cup/80 mL Original Barbecue Sauce Concentrate

or 1/3 cup/80 mL Honey Barbecue Sauce Concentrate

or 1/3 cup/80 mL Mesquite Barbecue Sauce Concentrate

2 tbsp/30 mL brown sugar

Cooking Directions

Preheat oven to 350ºF/180ºC. Place ribs in a large, shallow roasting pan, bone side down. Combine water and vinegar and pour over ribs. Sprinkle with garlic powder and Seasoning Salt. Cover and bake for 1 to 1-1/2 hours or until ribs are nearly tender. Let cool. (Ribs can be covered and chilled at this point if you wish to make them ahead.) Combine ketchup, Barbecue Sauce Concentrate and brown sugar. Place ribs on grill over indirect heat or bake at 350ºF/ 180ºC for 30 to 35 minutes or until tender, brushing the ribs with the barbecue sauce during the last 15 minutes.
