Custom Order Products and viewing orders

I have a custom order product set up with one custom text field. When
I add the product to the shopping cart, the custom text field's value
is carried over to the cart.

however, when I purchase the custom order product, the resulting order
doesn't display that custom text field. Isn't the typical flow that
the shop owner will review the custom order to get the customization
details?

I do see the custom text value in the cartitem, but that seems
orthogonal to the expected flow.
