Can customers set values for product variations?

I am creating an online store for a stationary company using django.
I'm hoping to use Satchmo (I have already built half the site using
it). Customers need to be able to enter in blocks of text (for
addresses and what not) to be printed on the stationary. As far as I
can tell there is no way to do this with Satchmo as is.

Has anyone done anything like this? If not can anyone tell me what is
the best way to implement it is? I'm very experienced with Django, so
I'm not afraid to modify the Satchmo code base. I'm just hoping that
there is someone who knows Satchmo well enough to point me in the
right direction. Thank you.

The simplicity or complexity depends on:
- which view+form you need to change
- whether you need to change the data model or not
- whether you accept at worst a solution based on javascript or not

There was a similarly general question where one user answered "half
hour", other said "maybe half year" and I remained silent :-)

You should look at using Custom Products for this use case. I think it should be fairly straightforward to use a text field to capture the customization.
