the mantras spoken at the time of saptapadi in wedding ceremony go something like this:

ishe ekapadi bhava sa mamanuvrata bhava....
urjje dwipadi bhava sa mamanuvrata bhava....

what are the meanings of these verses?
what is the source?
who is saying this to whom? bride to groom or groom to bride?

The various vedic traditions use slight variations of this mantra for the saptapadi. What you have seems to follow the Rig veda tradition. It is found in the ashvalAyana gRhya sUtra. The krishna yajur veda has it's variant in the taittiriya brahmana (though the context given by sayana is completely different). It is also found in the taittiriya mantra-prashna (ekagni kanda) in the marriage context.

The groom says this to be bride, as he leads the bride through 7 steps.

The basic construction is "विष्णुः त्वा अन्वेतु (एतर्थम्)". अन्वेतु = अनुगच्छतु.  किमर्थम् ? इषे = अन्नाय, ऊर्जे = बलाय etc There are 7 such items that we request Vishnu to bestow on the bride. The standard translations and commentaries for words like ऊर्ज् in this mantra are pretty lousy. Looking at all of the meaning of the roots in a dictionary gives us a much more reasonable, much richer explanation. This is difficult to translate.
 
मम अनुव्रता भव etc, are specific to some traditions, and basically aks for peity from the wife.

one more doubt. if groom says this to bride, then what are the forms 'ekapadi, dwipadi' etc? i was especially baffled by 'sakhaa'... it surely is in masculine?

These are from the gRhasUtras.  The groom says this to the bride.  The bride has no speaking role in the marriage ceremony.

"Be (taking) one step for strenght;

Second - Urja - for vigour

third - rAyas - for wealth

fourth -mAyobhavya - for happiness

fifth- prajA - for offspring

sixth - Rtu -  for good seasons (for the grain to grow)

seventh - sakhA - for friendship; and mAmanuvratA - participating in ceremonies pertaining to  my vows (i.e.  religious ceremonies)".

I am attaching the traditional commentary on the mantras found in the ekagni-kanda. Notice that the seventh item here is "saptabhyaH hotrAbhyaH".

I don't know much about the rig veda prayoga. Sorry.

A general comment on veda mantras -- vedic mantras are said to have unbelievable power, and can lead us to the highest truths. Today, they are mostly used in contexts that have to do with everything except the pursuit of this truth. Naturally, in many cases, the mantras don't quite fit. Explanations are full of linga-vyatyaya, puruSha-vyatyaya etc. IIRC, in the taittiriya brahmana, sAyana says that this saptapada mantra is used to laud the person from whom the yajamAna of the somayagya buys the soma plant (probably a man). 

Over time, traditions change. Older rituals are abandoned, and new traditions are adopted. For example, the upanayana loses relevance and is slowly replaced by a newer vidyArambha ritual. We all know that sarasvatii is the godess of knowledge. So, somebody searches the veda, finds mantras with the word "sarasvatii" in it, and uses it for the new ritual. There is nothing wrong with this, but mantras are being used in new contexts, and may not be aptly chosen in some cases.

Here is my interpetation

ekapadI is an fem adjectival phrase from ekapada - so it means -female person having or taking one step

 

sakhA saptapadI bhava sA mAmanuvratA bhava

SakhA is made fem from sakha for masc word sakhi at the end of compounds - changes to sakha - which means "accompabnied  by" or "attended with"  .

 

So it can be translated as "Be a ( female) companion; be  she who participates in  matters pertaining to my (religious) vows"

 

Learned  friends on this site can correct any mistakes.

In marriages in several communities in Uttar Pradesh and Punjab and even Arya Samaj marriages, the bride does have a speaking role. After the Saptapadi, the bride asks the groom for seven promises, and says that she would sit to the left of the groom if the groom promises to uphold each one of them.

I do not know the source of the seven promises, but a description can be found here. The orginal Sanskrit text on this page has some mistakes, but I have heard these verses many times in marriages.

I know that I do not know either GrihyasUtra-s or ekAgnikaNDa or the commentaries.

But the simple explanation of the words sakhA saptapadI - is one friend having tread seven steps.

And for the doubt of Ajit, Sanskrit Gender system in grammar is divided independent of sex division in daily life unlike English Language. Hence a wife can be called bhAryA, gRhiNI vs. gRuhI, or darAH (always in masculine gender, plural) or kalatram (always in neuter gender). So the word used here is being a substantive word with a fixed grammatical gender denoting a friend in general, it doesn't change its form if it is applied to feminine. The counterpart of this word, sakhI is generally derived from the masculine gender word "sakhi" is conjugated like other feminine words used for females. If the grammatical gender agrees with the sex based gender system, it is agreeable to us. Otherwise we may feel somewhat irksome. But Sanskrit uses irrespective of sex division in the daily life.

For grammatical analysis. 

sakhA is the form in the nominative singular in the masculine gender and ekapadI is also carry the same case, gender and number. No need to change it anyway to feminine form, though its usage may differ according to the context with different derivations.

ekaH pAdaH asyaa astIti ekpadI, paada is replaced with pada. In this case, it is "pada" which takes in suffix, ekam padam asya astIti - ekapadin(m.n.sg. ekapadI). In the feminine, it would be ekapadA, dvipadA etc. 

In this case, it can be taken as the common gender system of English and no agreement with sex division need be insisted. This is my personal opinion.

Also your explanation re sakhA - are you saying this is plu masc? I think it should agree with fem saptapadI - if it is adj - so it is made fem like senA.

It is the reverse. saptapadI is the adjective to sakhi in the
masculine gender singular as it is clear from the "ekagnikanda"
citation and there is nothing to reverse this position as "sakhi" is
always used in masculine gender. Simple translation would be a
companion who follows up to seven steps togather and becomes friend
for lfe (in this case).

It can be mitram in neuter gender. suhRd is in masculine gender. They
are grammatical genders and need not have always agreement with sex
based gender system as in English. This much only meant by my post.

I am sorry. Just I got the correct explanation for your reply. As I had informed, the word सखि is of fixed gender masculine. It is affixed with feminine suffix "ङी" to get the feminine form सखी in classical language obligatorily  and in Vedic language it is variable with and without the suffix as in the masculine gender, just like the word आत्मन् at the end of the compound as adjective to qualify any noun in the feminine gender.
 


सखा सप्तपदी भव.
 
The other variant सप्तपदा is also available in some other गृह्यसूत्र-s where it is clear the word सप्तपदी is feminine. सप्तानां पदानां समाहारः - सप्तपदी-गमनम् is another usage in the feminine as derived thus. 

On the whole I am not sure of the translation provided by you. In all the sentences, विष्णुत्वान्वेतु is the part of the मन्त्र  
सखा सप्तपदी भव, इषे विष्णुस्त्वामन्वेतु or मामनुव्रता भव according to the गृह्यसूत्र-s.

There is something more than literal meaning needed for translating the sentences in the respective texts, concordance with the ritualistic practices. Hence I didn't try any  translation of my own. There are interpreted in गृह्यप्रयोग-s in different ways as pointed out by Ajit. EkagnikANda contains the original "mantra"s indicated for the rite सप्तपदी which are taken by different writers of गृह्यसूत्र-s and the writers of प्रयोग-s (manual or a practical guide to the सूत्र-s) one of which is posted by Ramakrishnan.

Seven Vows In Hindu Wedding
  • The bride and the groom take the first step of the seven vows to pledge that they would provide a prospered living for the household or the family that they would look after and avoid those that might hinder their healthy living.
  • During the second step of the seven pheras, the bride and the groom promise that they would develop their physical, mental and spiritual powers in order to lead a lifestyle that would be healthy.
  • During the third vow, the couple promises to earn a living and increase by righteous and proper means, so that their materialistic wealth increases manifold.
  • While taking the fourth vow, the married couple pledges to acquire knowledge, happiness and harmony by mutual love, respect, understanding and faith.
  • The fifth vow is taken to have expand their heredity by having children, for whom, they will be responsible. They also pray to be blessed with healthy, honest and brave children.
  • While taking the sixth step around the sacred fire, the bride and the groom pray for self-control of the mind, body and soul and longevity of their marital relationship.
  • When the bride and the groom take the seventh and the last vow, they promise that they would be true and loyal to each other and would remain companions and best of friends for the lifetime.

Sapthapathi:
The bridegroom(BG) gets up from the seat holding the right hand of the bride(B). He then goes round the Holy Fire (Agni) from the right side, by lifting the right feet of B step by step. This is done for seven steps. With each step, he recites a mantra addressed to B, with the following meaning.

"Let Lord Maha Vishnu follow each one of your steps for the following specific purposes.

Step 1: To give you unlimited food.

Step 2. To give you excellent health and energy.

Step 3. To make you perform your vrithas (rituals) as ordained in Vedas, during your life time.

Step 4. To give you happiness in life.

Step 5. To make your cows and good animals to grow in strength and in numbers.

Step 6. To make all the seasons be beneficial to you.

Step 7. To make the homams (sacrifices to be done in Holy Fire) to be performed by you in your life as ordained in Vedas, successful and free from hindrances."

Obviously, the idea behind this is to pray to Lord Vishnu, the protector of life, for his blessings in marital life.

BG then recites a mantra to convey the following meaning:

"Sakaa -Sapthapadha -bhava Sakaayov -Saptha padhaa –Bhaboova"
By these seven steps you have taken with me, you have become my best friend.

"Sakyam -the' -Ghame'yam Sakyaath -the' Maayosham -Sakyan me"
I will never move out of this relationship. God has united us in this bondage.

"Maayosta -Samayaava -Samayaava Sangalpaavahai –Sampriyov"
We shall perform all activities together with love and affection.

"Rosishnu -Sumanasyamanov Ishamoorjam - abhi –Savasaanov"
Let us be friendly in our thoughts. Let us observe our duties and rituals together.

"Managhumsi -Samvrathaas smu Chiththaani -Aakaram –Sathvamasi"
If you are the lyrics, I am the music. If you are the music, I am the lyrics.

"Amooham -Amoohamasmi saa -Thvam –dhyowraham"
If I am the heavenly body, you are the earthly world.

"Pruthivee thvam -Retho' aham -retho' Bhruthvam –Manohamasmi"
While I am the life source, you are the carrier of the same.

"vak thvam -Saamaa ham asmi -Rukthvam –Saamaam"
I am the thoughts and you are the speech.

"Anuvradhaa -bhava Pumse' Pumse' -Puthraaya- Veththavai"
While you are the words, I am the meaning.

Sorry I don't understand your questions What do you mean  by "Saptpadi text in English letters" do you want a transliteration or a translation?.If you can be specific probably list members can help?

There are differences in the mantras chanted during Saptapadi as depicted in different Grihya Sutras(18 are extant now)
Please find attached a file showing Saptapadi as per Ashvalayana Grihya Sutra of Rig Veda and Paraskara Grihya Sutra of Shukla Yajur Veda with English translation.

I have just gone through this thread. 
Can someone tell me how the tradition flipped from the bride having no role in the saptapadi promises to the one where bride promises everything to the groom?
