Namaste,
You may find the following book useful for your purpose. Chinmaya International Foundation has recently published a collection of Sanskrit quotes with English translation. The title of the book is "Sukti Sudha". It is a very good work done by a team of scholars. Quotes are arranged subject-wise which makes it easy for reference.
