Dear friend, Namaskar.
For getting Shiv Shambhu as her husband,Parvati underwent more and more rigorous penance.Ultimately she gave up eating even the edible leaves, on which she was sustaining.Hence she got this title and also Lord Shiva in marriage. Hence she is referred to as APARNA.

This is the explanation given by कालिदास in his कुमारसंभवमहाकाव्य-

स्वयं विशीर्णद्रुमपर्णवृत्तिता परा हि काष्ठा तपसस्तया पुनः । तदप्यपाकीर्णमतः प्रियंवदां वदन्त्यपर्णेति पुराविदः॥5.26||

नास्ति पर्णं तपस्यायां पर्णभक्षणवृत्तिर्वा - अपर्णा। इति शब्दकल्पद्रुमः।

Without leaves is the literal meaning. Literally he explains, though she used to live upon  eating only the leaves fallen out of the trees and gradually she left it also she abandoned it and hence she is called अपर्णा not eating even the leaves.

The same explanation is to be found in the Rāmacaritamānasa of Gosvāmī Tulasīdāsa.

संबत सहस मूल फल खाए । शाक खाइ शत बरष गँवाए ॥ १-७४-४ ॥
कछु दिन भोजन बारि बतासा । किए कठिन कछु दिन उपवासा ॥ १-७४-५ ॥
बेल पात महि परइ सुखाई । तीनि सहस संबत सोइ खाई ॥ १-७४-६ ॥
पुनि परिहरे सुखानेउ परना । उमहिं नाम तब भयऊ अपरना ॥ १-७४-७ ॥

A quick translation - During her penance, Umā subsisted on fruits and root for a thousand years. Then she spent a hundred years eating vegetables. For some days, she survived only on water and air. Then for some days she did not even take water or air performing a difficult fast. For three thousand years she ate only the dried leaves of the Bilva plant which had fallen down on the earth. Then she even left eating the dried leaves. It was then that the name of Umā became Aparṇā.
