3/4 cup quick-cooking rolled oats
3 cups tart apples
1/4 cup whole-wheat flour
1 1/2 cups strawberries
3/4 cup brown sugar
1 1/2 cups rhubarb
1/2 tsp. ground cinnamon
2 Tbsp. orange juice
3 Tbsp. light margarine
1 1/2 Tbsp. cornstarch
Preheat oven to 375 degrees F. Coat shallow 11x8-inch baking dish
with cooking spray.
In medium bowl, mix rolled oats, flour, 1/4 cup brown sugar, cinnamon
and margarine until mixture forms coarse crumbs; set aside.
In large bowl, combine apples (peeled and sliced), sliced
strawberries, sliced rhubarb, 1/2 cup brown sugar, orange juice and
cornstarch. Pour fruit into prepared baking dish; spread. Sprinkle
with crumb topping.
Bake uncovered 35-40 minutes, until fruit is tender and topping golden brown.
