Having extensively travelled to Santorinin, the most recent in June, Id
say visit Oia. Akrotiri is nice...but if you are going to visit the island,
its not what i would consider THE spot. My sis and her husband went there
during our last visit and their response was, "Its nice". Hardly an
inpiring time for them :)

You can go on a trip out onto the volcano. This was the most
interesting thing we did in Santorini. It's a fairly rocky and dusty
walk. Don't wear your 'good' sandals. Actually... don't wear sandals
at all, wear some boots.
Failing that I'd just explore around Fira town a bit, lots of expensive
jewelers (window-shopping only for us), some nice bars and cafes.
You should be able to get a great view of the whole 'caldera'
that is (was) Santorini.
If you're inclined towards religion, then there's a few of the ubiquitious
white-and-blue churches here and there around Fira town too.

I would recommend Oia if you interested in something more than rocks covered
buy an imense umbrella (that's Akrotiri). Oia is a small beautiful village
in the right arm of the beautiful Santorini, with lots of restaurants,
bright colors, and narrow streets; altough, Phira is well worthy of a
photograph, as well as for a promenade for some 1-2 hours, and a
unforgetable dinner at one of tthose great esplanades, drinking "ozu" and
eating that marvelous Greek food.
Please, if you are fat do not climb the island on a dunkey, the poor animals
keep doing that distance every single day.

If you are interested in archaeology, Akrotiri is fantastic.
You might think about researching all of the islands you will visit and save
money by skipping the inflated costs of the Cruise Lines excursions. You can
almost always do the same itinerary as the excursion on your own for much less
money.
We loved Oia! Beautiful white-washed houses,
hotels, shops, and restaurants that cling to the
side of the crater that is Santorini. The town
at the top as you get off the tram or climb
the stairs is also worth exploring.
I envy you. We really want to go back!
