I looked at the word "KNIGHT" and realized that, by flipping it
backwards and forwards and removing one letter at a time, I could get
it down to the one-letter word "I."

KNIGHT (thgink)
THINK (kniht)
KNIT
TIN
IT
I

Cna anyone find a longer word? Ideally, where all the words along the
way are fairly common words themselves?

I wrote a search program (hint: start at the single-letter words and build
upward. And memoize.), threw it at /usr/dict/words, and it found a few longer
ones, and a lot more 6-letter possibilities. Here are my favorites:

In terms of ones that "beat" KNIGHT, I'm liking Spirits and Streams
the best, in terms of having the most common words. But all of the
7-letter ones above are pretty nice.

I can't get into any of the 8-letter ones too much. They always seem
to involve a word like "Satraps" or "Derats" or "Stoped" somewhere
along the way.

Oops, sorry, somehow my copy-and-paste missed "DEMITS".
<http://dictionary.reference.com/browse/demits>

Also, in the next one, "STARTED".

What do you have against "satraps"? It's in fairly common use, not
just among fans of the old Persian empire: see e.g. <http://
chicago.about.com/library/blank/blhechtsatraps01.htm> and
<http://www.time.com/time/magazine/article/0,9171,871172,00.html>.
It seems "stoped" is a mining term, but also current in surfer/stoner
slang.
On the other hand, dictionary.com and the OED don't seem to have
"derats".

I have a bigger problem with SPARTA, but that's because I always expect
these sorts of things not to allow proper nouns.

DERAT, along with its inflected forms, is in TWL06, the Scrabble word
list for North America.

That's kind of weird - I'd think derat would mean "remove the rats
from", as in "The verminator goes in and derats the KFC." ;-)

Cheers!

Or, "derats" was Tattoo's main explanation why Fantasy Island never got a
four-star rating.

It may also be a word if you STARED at it backwards.
