Well, this sounds easy enough... I reckoned that "Italian painter" is the
straight part of the clue, "overseen" is an anagram and "anew" is the
anagram indicator.
Unfortunately Italian art is not my strong point and I seem unable to locate
a suitably definitive list of Italian artists on the web.
Help, please?

VERONESE
from http://www.kfki.hu/~arthp/bio/v/veronese/biograph.html
Paolo Veronese was an Italian Renaissance painter; one of the great
masters of the Venetian school. Originally named Paolo Caliari, he was
called Veronese from his native city of Verona. He learned painting
in Verona from Antonio Badile, a capable exponent of the conservative
local tradition. That tradition remained fundamental to Veronese's style
throughout his career, even after he moved to Venice in 1553.

Store in a cool, dry place.
There are many sites on the web in which you could have found the
answer to that either by getting anagrams of "overseen", since you had
already got that far, or by looking for words that fit the pattern, .e.o.e..
Once of them is http://cfaj.freeshell.org/wordfinder
