I'm surprised that you're overexposing. I'd spot meter on the dog's black
coat, and then underexpose 2 stops from that value. It should render the
black coat nearly black, with fleck and hilight detail visible.
Overexposing will indeed bring out more detail in the black but it will
also make your black dog look gray.

Bracketing is also in order here.

AND IF YOU USE a flash be sure it is away from the camera.
otherwise it will penetrate the sparcer hair, above the
eyes for instance, giving the exagerated appearance of
