There is no such thing as a standard RAW. Each camera is different.

start with the software that came with the camera.
The most faithful RAW converter will be that which comes from your
camera's manufacturer. Others will come close, but are usually
products of reverse-engineering of your camera's RAW format and will
invariably leave settings out of the mix. For example, I shoot Nikon,
so I use their free ViewNX. Adobe's Camera RAW (ACR) in combination
with Photoshop Elements 7 worked okay, but only brought in the White
Balance settings. Other settings, like the Picture mode/control in the
camera are ignored. True, you can always recover or set your own in
post-processing, but the closest interpreter to what your camera
actually captured still remains that which the manufacturer provides,
leaving a lot less room for guessing.
I use ufraw. It's free and it's 'current'.

DCraw is not really something a person new to processing
camera raw data might want try. It certainly has its
uses, but typically it is not typically used as a
general purpose raw converter.
UFraw and RawStudio both use the code from DCraw and add
a GUI interface, along with all the other necessary
fluff that is required for a production program (color
management, etc. etc.).

Not if it is a Nikon as their RAW software SDK is freely available.
1 Use the SW that came with the camera.

UFRaw has a fabulous user interface.
I don't like Udi's idea of icons, but otherwise it's great.

So if you don't like it, don't use it. I simply stated that it is what I
use.
Do you have any pointers to "how to" guides.
I can use the controls, and they work "as described".
But I don't know enough to use them subtly "in combination"
to get the best results.

There are a bunch of books available for Adobe Camera Raw
(Photoshop). They should give you an idea of what can be done in anty
RAW converter. Look in a big mall bookstore, you don;t have to buy
one.
Basically;
You can "select" lighting, (shade, incadensent, direct sun, etc)
You can set the histogram range over a wider range. This means that you
have a wider effective dynamic range
On some you can clip
All of the above can be done over a wider range and with less "damage"
compared to what would happen if you tried it in jpg.

And yet, somehow Adobe Camera RAW doesn't bring in Nikon's picture
control. Maybe it's because regardless of the SDK being out there,
Nikon is the one with the most motivation to ensure its camera's
features are exploited.

Until they got bought out by %$#@!#$@! Adobe, I would've recommended the
free version of RawShooter.
What sort of computer/OS are you running, & what's your budget like?

Damn, when I saw that it was multi-platform (Windows+Linux), I thought
it'd be open-source as well, but no such luck.
