If I were to paint my own canvas background, what kind of paint should I
use?

If you want to paint on canvas you start with (white) primer. But what are

I did couple of these with mixed results. You can
get special fabric paint for this job. It usually has a
nuetral pigment base and then colour dyes that you mix up for the job.
It's kinda fun to do. Expensive finger painting.

I would check with an art supply store.

I have used enamel or latex house paint. Both seem to work. You also can use Oil
paint.

Many folks use latex house paint thinned 1:1 with water.
