I was wondering if you could tell me which eCommerce sites are the best
designed and most efficient.

Not just fly fihsing sites but any eCommerce sites.

I agree about ezflyfish. Other good sites are Hook & Hackle, The Fly Shop
(Redding) American Fly Shop (Sac) World Waters, Angler's Pro and the Fly
Fishing Shop In Welches, Or. Poor sites are Bob Marriotts, and the old
Kaufman (apparently being replaced).
