Chopin! I would particularly welcome any recommendations on Chopin pieces
playable by a beginner (are there any??)... maybe some of his mazurkas or
waltzes?

The Chopin works you mention above are among his easiest works to
play.
There used to be a book of "The Easiest Original Chopin Pieces for the
Piano" which included the pieces you mention plus the Mazurka Op. 63
#2, Op. 68 #3, and Op. 7 #2. Also the Nocutrne op. 15 #3 and the
Waltz in a minor.
Most everything else, unfortunately, is more difficult.
Try some of Schumann's Kinderszenen or his Album fur das Jungend.
Some of Schubert's waltzes are also possible.

Well Wayne, most Chopin is not exactly beginners' material; your are more likely to find baroque works in any collection for new pianists, although a certain technical level is necessary to do what you should with the pieces. Anyway, here's a list of easier romantic pieces, the type I like to play when I'm lazy and don't need big challenges; they may be right for you.
Chopin Waltz Op.69 no.2
Nocturne Op.72 no.1
Schumann Kinderszenen 1,4,7
Much of Macdowell and Grieg
Scriabin Prelude Op.16 no.1,4
Brahms' famous waltz
but hey, the best bet is to get a collection like Classics to Modern. There should be all sorts of things there arranged for ability level.

I have seen those Classics to Moderns books and probably will purchase
one. There are some Chopin mazurkas I have found that I will give a shot
at...
