None. The 2nd and 3rd Anthology discs sound way better
than the remasters, in my opinion.

There's too much to absorb to give a definitive answer right now. I
listened to all the stereo remasters in sequence and I thought PPM,
WtB and AHDN were great, but then I suppose I may have got used to the
better sound quality, so BFS wasn't so impressive and Help! was
actually disappointing. RS and Revolver, ok. It was then a couple of
days before I got to SPLHCB and I thoroughly enjoyed itm but how much
better it was, I'm not so sure. The rest, pretty much the same. To
give a fair assessment, I'd need to go back to the original 1987 discs
and listen to them, then start again, probably in reverse. Even then,
I'd probably need to repeat the process, album by album. You see,
there's just too much for a tired brain to process.
As for the mono set, well it depends how much Beatles you want (and
can afford). I wish I could afford it, but I can't justify it right
now - and that may mean that I end up being too late if it really is a
limited edition. However, as the mono releases were the ones the
Beatles themselves were most interested in up to Pepper at least, then
the best suggestion seems to be, if youcan afford it, buy the mono set
and add the stereo albums you need to make the set complete, then add
further stereo albums as/if you wish.
I just checked eBay and I see that people are selling off individual
albums from the mono set. That's what I was waiting for! Gonna get me
a Sgt. Pepper and perhaps a couple of the early ones.

In fact, much of the "improvement" comes from the fact that the 1987
CDs for these albums were mono, and now we're hearing them in stereo,
I think....
I really like much of the psychedelic music in mono, Revolver and Sgt
Peppers in mono stand out, and songs off Magical Mystery Tour. John's
voice on I Am The Walrus seems to have a new lease of life too in the
mono and I think in the stereo as well.
I really like hearing the early albums on the stereo remasters, much
needed improvement over the awful 87 mono CDs. I stick my finger at the
people who say the stereo is too separated.
The mono set gives a nice feel to the all the music. I recommend the
1965 stereo Help and Rubber Soul over the official stereo remasters for
sound quality.

The separation only becomes evident on headphones or if the speakers
are placed wide apart, otherwise it's not as disturbing as I thought
it would be
