Not to brag...had a pretty good pheasant dinner the other
night...courtesy of birds provided by father-in-law. Here's a link to
a picture of final product:
http://4.bp.blogspot.com/_NH5x5yP6cGo/S0s1m4kb6aI/AAAAAAAACIQ/tLKPUru77EA/s320/PheasantPic6.JPG
Not 100% sure such a long url will work, but here's the recipe...it's
easy and real good and would work equally well I believe with quail,
rabbit, or squirrel:

Baked Pheasant
Ingredients:
1 can (10.75-oz) cream of chicken soup
1/2 c Apple cider
1 tb Plus 1 ts Worcestershire sauce
3/4 ts Salt
1/3 c Chopped onion
1 Clove (small) garlic; minced
1 can (4-oz) sliced mushrooms; drained
2 Pheasants
Paprika
Directions:
Blend all ingredients except pheasants and paprika. Pour over
pheasants and sprinkle with paprika. Bake at 350, covered, for 1-1/2
to 2 hours. Remove cover the last 30 minutes of cooking. After 1 hour,
sprinkle again with paprika.

Take Care,
Paul

I went squirrel hunting today and got a limit. I might have to give that a
try...

In article <cVO3n.18745$w21....@newsfe17.iad>, go-fi...@charter.net
says...
We make a lot of squirrel and dumplings.
Make it just like the chicken variety tastes even better.

I did try the recipe and it tasted great! I used three squirrels and it was
the perfect amount for two people.

Howdy,
Re: Your recipe
Tried your recipe and it was really good.
In the prep phase I could not resist adding a splash of dry white wine
along with the cider. I'll be passing your recipe on to family and
friends.
Thanx!
