I have to paint miniatures for three years and I was wondering how
much paint is needed to undercoat a normal model (say a spear-elf or a
corsair) or in other words a bottle of paint (Citadel's) is enough for
undercoating how many models?

Hard to say. It depends on how heavily you undercoat, whether you're using a
brush or airbrush, whether you're undercoating the entire model, or just the
portions which will be picking up the related color(s).
That said, I'm using the old Citadel paint (now Coat D' Arms), and I've painted
several hundred miniatures without finishing a single bottle, tho some of my
staples (e.g. Elf Grey, Chainmail) are finally getting a bit on the low
side....

Forget citadel if you have to buy the supplies yourself.
For undercoat, get hold of the stuff you undercoat galvanised garage doors
and metal fences with.
I use "Blackfriar" Interior and exterior priming pain, galvanised metal
primer.
