INGREDIENTI (per 4 persone):
800 gr. di polpa di cinghiale
400 gr,. di pomodori pelati
200 gr. olive nere snocciolate
1 cipolla
1 carota
1 sedano
2 spicchi di aglio, olio d’oliva (quanto basta).
Alloro, qualche foglia di rosmarino, noce moscata, vino rosso, sale e
pepe.
PREPARAZIONE:
Procedete a tagliare la polpa di cinghiale a pezzetti e metteteli in un
tegame a fuoco medio, salate e quando verrà rilasciato il liquido,
provvedete ad eliminarlo.
Intanto in una pirofila, mettete 8 cucchiai di olio d’oliva insieme a
tutti gli odori ben tritati, unite l’alloro, rosmarino e infine
aggiungete i pezzi di cinghiale. Fate insaporire bene, bagnate il tutto
con 2 bicchieri di vino, salate, pepate e cuocete lentamente.
Quando il liquido si sarà ritirato, unire il pomodoro e cuocere a fuoco
lento per circa 2h a coperchio chiuso aggiungendo del buon brodo caldo
quando occorre (il cinghiale a fine cottura dovrà risultare così tenero
da spezzarsi con la forchetta).
Mezz’ora prima di servire, unite le olive e profumate con una
grattatina di noce moscata.
Questa ricetta così semplice vi farà fare una bellissima figura dandovi
una grande soddisfazione davanti ai vostri ospiti, il successo è
assicurato.
