Brie with Smoked Salmon and Dill

1 lg. round of Brie cheese
Smoked salmon with black peppercorns ( 8 oz or as desired )
Fresh Dill, chopped

This makes a superb appetizer and possibly a very expensive one too. I
usually try to get the smoked salmon and cheese on sale if I can. Smoked
salmon freezes well. Score the Brie around the edges into three layers.
Then separate into 3 rounds using dental floss. Then place slices of
smoked salmon evenly to cover the layers and sprinkle with the dill. Press
some chopped dill over top of the Brie. Wrap the whole cheese carefully
in plastic wrap for 24 hours to mingle flavors. To serve , carefully cut
Brie into wedges.

Note: serves 12 or more. For a smaller appetizer use a smaller round of
Brie and less salmon and dill. Note: I prefer to always remove the top
rind of the Brie as I don't care for the rind.
